Slow Cooker Birria (Easy, Authentic, Set-It-and-Forget-It)

by Megan Larso on January 23, 2026

Slow cooker birria is one of the easiest ways to make deeply flavorful, fall-apart tender birria at home, especially when you’re cooking for a crowd or planning ahead.

This method uses Birria Bombs by Spice Orbs to eliminate soaking chiles, blending pastes, and measuring spices, while still delivering a rich consommé that works for tacos, quesabirria, ramen, and freezer meals.

If you want authentic birria with minimal effort, this is the slow cooker version that actually works.

Why Make Birria in a Slow Cooker?

The slow cooker is ideal for birria because it allows:

  • Long, gentle cooking

  • Complete flavor extraction

  • Extremely tender meat

  • Hands-off preparation

Birria Spice Orbs dissolve cleanly over time, making the slow cooker one of the most forgiving and consistent methods.

Ingredients You’ll Need

  • 1 Birria Spice Orb (large)

  • 5–7 lbs beef (chuck roast, short ribs, shank)

  • Water or broth (to mostly cover meat)

Optional (to finish):

  • Salt, to taste

  • Bay leaf (if desired)

That’s it.

Step-by-Step: Slow Cooker Birria

Step 1 – Add the meat

Place beef directly into the slow cooker.

Large cuts are fine — no need to trim aggressively.

Step 2 – Add liquid

Pour in water or broth until the meat is mostly submerged.

You’re building the consommé at the same time as the meat cooks.

Step 3 – Drop in the Birria Bomb

Add 1 Birria Spice Orb directly into the liquid.

No cutting.
No crushing.
No blending.

The orb will slowly dissolve as the cooker heats.

Step 4 – Cook low and slow

Cover and cook:

  • Low: 6–8 hours (recommended)

  • High: 4–5 hours (if needed)

The birria is ready when the meat shreds easily with a fork.

Step 5 – Shred and return to broth

Remove meat, shred, then return it to the consommé.

Taste and adjust salt only at the end if needed.

Your birria is now ready to use.

How Much Meat Does One Birria Bomb Season?

Each large Birria Spice Orb seasons 5–8 lbs of meat.

  • 5 lbs → extra rich, taco-focused birria

  • 6–7 lbs → balanced and versatile

  • 8 lbs → lighter broth, great for soups and ramen

Birria Bombs are sold as a 2-pack, making them ideal for batch cooking.

What Can You Make With Slow Cooker Birria?

Once cooked, you can use slow cooker birria for:

  • Birria tacos

  • Quesabirria tacos

  • Birria ramen

  • Rice bowls

  • Nachos

  • Enchiladas

  • Freezer meals

The consommé is designed to be dippable, spoonable, and reheatable.

Storage & Meal Prep Tips

  • Store birria and consommé together

  • Refrigerate up to 4 days

  • Freeze in 1–2 lb portions

  • Reheat gently on the stovetop

Birria made in the slow cooker freezes exceptionally well.

Common Questions

Do I need to stir it?
No. Stir once early if you want, then leave it alone.

Can I add two orbs?
Yes, for very large batches (10+ lbs) or extra-rich broth.

Does the orb fully dissolve?
